A Two-Step Waiter’s Corkscrew never misses a cool party.

In this new post about “opening a bottle of wine with a two-step waiter’s corkscrew”, I give you a series of precise steps for its use, both for curious and wine lovers as for all the professionals at Front of House.

Certainly, if you would like or you already work at Front of House, you will know that opening a bottle of wine will help you to get a better position. It is not difficult but you do need relative practice time.

Have you ever stopped to observe the people that work at the restaurant Front of House? You didn’t realise that some of them when they are in the “mystical” moment of opening a bottle of wine, it seems that instead of having a delicate relic on their hands, they have a shaker (” it may be that the customer asked for the wine to be shaken …”).

So, if you would like to open a bottle of wine with elegance, style, and, most important, in a professional way, I would like to suggest you take into consideration the following STEPS:

STEP 1: SHOW THE BOTTLE

  • Put your napkin in your arm.
  • Take the bottle vertically and, from the right guest’s side, show the bottle to the guest for two reasons:

– To show the wine.

– Double-check with guests is the right wine and vintage.

STEP 2: TAKE THE CAPSULE OFF

  • Hold the bottle firmly with the label on the face of the guest.

  • Open the blade, and with its edge make two nice cuts around the capsule just under the second ring of the bottle and another cut straight uppercut.

(Try to make strong cuts and it will be quicker this step).

  • Sometimes the capsule is very stuck to the bottle. However, when it is very loose, you can remove it all.

The reason to take the total of the capsule off or if not partially, but the most far away from the ring of the bottle, is to avoid the metal particles of the foil capsule going to the wine when you are pouring it.

  • Don’t leave the capsule on the table.
  • Clean with the napkin the finish of the bottle to remove the metal particles of the capsule.

STEP 3: INSERT THE SCREW

  • With your other hand insert the tip of the screw in the center of the cork.
  • Now WITHOUT MOVING THE BOTTLE continue holding it firmly and rotate the screw down into the cork until reaching nearly the final spiral loop shown at the top.

(I said nearly until the end because sometimes the corks are shorter than the 5 spirals of the screw and you can break the cork dropping cork particles into the wine).

STEP 3: INSERT THE SCREW

STEP 4: PULL THE CORK

  • With the two times of corkscrew put the first notch time rested on the finish of the bottle.
  • Holding firmly the bottle, lift the end of the wine key using lever action to get the cork moving up until you can rest the second notch time on the finish.

  • Now, push up again until you feel ALMOST the cork is out.
  • And then give it a slight turn to take the cork out without breaking it and without making a noise. (Be careful in this final step because it is possible to break the cork).

STEP 5: POUR A SIP OF WINE

  • Smell the cork to check the wine is right and leave it on the table on a small plate.
  • Pour a sip of wine to the guest. If the guest gives you the approval you can start pouring the wine.

IN GENERAL:

– White wines and young reds don’t have to decant them.

– Gran Reserva Reds and some Reserva you have to decant them before pouring.

Now is the time to take a sip and check if the wine is right!
